This hearty and flavorful chicken chili is perfect for a cozy dinner. Slow-cooked to perfection, it’s filled with tender chicken, beans, and spices that will warm you up from the inside out!

Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
Transfer the sautéed onion and garlic to the slow cooker. Add the chicken breasts, canned diced tomatoes, kidney beans, black beans, corn, chili powder, ground cumin, salt, pepper, and chicken broth.

Stir well to combine all the ingredients. Make sure the chicken is submerged in the liquid.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easy to shred.

Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back to the chili and stir to combine.

Serve hot, garnished with fresh cilantro if desired.
